Beach Cottage Two in One Recipe ~ Tuna Pea & Lemony Pasta ? A ...

Hope you enjoyed the weekend?

Ready for another Too Easy recipe?I hope so

So this is another one of our staples?and it ticks those boxes that I need ticked to make it into my recipe collection?that means, quite simply that it is super-duper easy, uses everyday ingredients accessible to anyone, is budget-friendly and more it makes you look like you worked pretty hard to get the meal on the table when, well really all you did was a little bit of thinking, shopping and chopping?

But?wait?it gets even better!

You can make this for dinner, do double and chuck the rest in some tubs for lunchboxes?.so it?s a recipe 2 in 1!

I love that kinda multi-tasking?

This started off life in the very early days of me being a mummy as simply some tuna in some pasta with some cheese?I had copied it from one of those baby food jars as Honeymoon Baby absolutely loved fishy things?.he first tried it when one day I had been going out and about somewhere and for convenience had taken one of those little glass jars of baby food?please do not re-coil in horror from your screen, at my slovenly ways because, if I tell you the truth, that poor baby had to suffer at the hands of my first-time-mother-food-obsessiveness and didn?t have a piece of chocolate, grain of salt or sugar anywhere near him?he was lucky to get a jar of baby food not made by my fair hands?

I gave him that jar (which I might add was organic) and he loved it and reading the ingredients, which were like only 5 or so I thought I?d give it a go myself?

I did and he loved it and so did all the other BC Kiddos when they came along and now when I say we have ?tuna & pasta? for dinner you might well think I had announced we are going to the Ritz.

But, there was a problem with this little baby food dish?Mr BC, isn?t a huge fan of pasta, he likes some meat in his meals to be very honest?

and though I didn?t add more meat, I played around a bit to make this more tasty, with more stuff going on in the bowl?to make him think this was oh-so-much more than just throwing some tinned tuna in some pasta which really it isn?t but we don?t have to tell him that, do we?

I found a recipe for something similar with beans, and so I tried that?but I preferred the hint of sweetness from peas?and just because I wanted to make this more ?store-cupboard? and because I always always have a bag of frozen peas in my freezer?I mean who doesn?t?

350g pasta

1 lemon chopped ?+ zest

3 cloves garlic

1tbsp olive oil

1tbsp French capers

garden herbs (basil, parsley good here)

1 large 425g can tuna

1 large/2 small onions diced

2 cups frozen peas

2 cups parmesan cheese grated

put pasta on to cook following packet instructions

1. ?add oil to pan and garlic & onion to soften?about 5/6 mins

2. add the lemon zest & lemon

3. add the capers, tuna, herbs plenty of salt & pepper

4. about 2 minutes before the end of the pasta cooking time, throw peas into cook with the pasta

5. drain the pasta/peas

6. taste the tuna/lemon?lemon should be sweeter?if not leave it on for a few mins more

7. add the pasta/peas to tuna pan, stir through & add parmesan & heat through

serve with extra parmesan, a glug of olive oil, plenty of fresh herbs, lots of freshly grated pepper

*BC Notes
make double & seal in containers for lunchboxes
add a cup or two of sour cream for a more saucy feel
cut the lemon into 1cm small squares
prep the onion, garlic, capers, lemon, grate cheese the night before & cover in fridge
make earlier in the day & serve cold in the summer
adjust the lemon to your taste?this is fairly lemony?we like that :-)
if you are really rushed, omit the whole garlic, onion bit & once your pasta has cooked, stir in tuna, garlic oil, zest the lemon over the pot & some of it?s juice to taste, a handful of herbs and throw in the cheese..
serves 4 adults or my family of 5

I normally make this meal on the only week night where we don?t have sport?but it?s more than easy enough to throw together when you come in the door too?
